Surprise pops


Who doesn't like surprises? Especially a delicious surprise :) You can be very creative with these chocolate peanut balls and add an element of surprise in its core. I used golden raisins and dried mangoes as my surprise element, since it gives a good chewy texture. You can replace them with anything other nut/dried fruit, or be more creative and add jams. Be sure to use an unsalted peanut butter (you could also use almond/cashew butter). I love these chocolates since it has a depth of textures, starting with thick dark chocolate, as it melts in your mouth you get the smooth peanut butter. Just when you thought its a soft chocolate, the crunch from the nut in the centre surprises you!

Chocolate peanut pops
Ingredients
1 cup semi sweet chocolate chips (I used 60%)
1 cup peanut unsalted butter
handful dried mangoes (you can replace this with raisins or dates or figs)
handful roasted peanuts (or try whole macadamia)



Directions
1) Microwave the chocolate chips in a bowl for about a minute and half to completely melt the chocolates
2) Scoop a spoon of peanut butter on your pals and make a small cookie, place dried mangoes and peanut in the centre and create a ball out of it





3) Roll the balls in the melted chocolate, place on a parchment paper and let cool for about 2 hours.
