The first time I ate a banana bread was at Starbucks. It was love at first sight. The starbucks banana bread also served as our daily breakfast during our initial days in the United States, while our kitchen was not yet settled. Once we had our kitchen ready for cooking, we baked banana breads several times. My husband is a pro at it :)
Banana payasa (a simple Indian dessert) has only four ingredients - bananas, milk, sugar and cardamom. Inspired by the banana payasa, here is my version of banana bread.
Ingredients
2 ripe bananas
3 eggs
3 cups almond flour
1/4 cup oil
3 tbsp truvia (sugar substritute)
1 tbsp white vinegar
3/4 tsp baking powder
1 tsp vanilla
1 tbsp cardamom powder
1/2 tsp salt
1/2 cup chopped walnuts
Directions
1. Preheat oven to 360 degrees. Break the eggs in a bowl and beat for a minute. Add oil, vanilla, sugar, vinegar and oil and mix together
2. In a separate bowl, mash the bananas to form a paste
3. In the third bowl, sieve the almond flour along with baking powder and cardamom powder
4. Add the banana mix to the egg mix and blend with a spoon. Add the dry ingredients slowly into the wet ingredients bowl, while mixing.
5. Place a parchment paper into the baking bowl and pour the mixture. Spring walnuts. Bake for 45 minutes.
