My hubby loves "hittina unde" (sweet wheat balls). Every visit to India means we get a box full of hittina unde freshly made by my mom. It usually lasts couple of weeks, and we are back to our routine diet. My affair with hazelnut is never ending one. So I thought of surprising my hubby with hazelnut unde, so he can relish the dessert without cheating on his diet. It came out pretty well.
Ingredients
1 cup hazelnut flour
1/8 cup truvia (sugar substitute)
3 tbsp ghee
Handful raisins
Handful cashews
1 tspn ground cardamom
1 pinch salt
Directions
1. Melt ghee in a pan and roast the cashew for a minute on medium to low flame. Add raisin and fry for another minute
2. Once the cashews are golden, add the hazelnut flour and sugar to the pan. Roast the mixture for 5-7 minutes on medium to low flame.
3. Once you smell the sweet hazelnut aroma, add cardamom powder and turn off the heat. Let cool for 5 minutes. Make small balls using your palm. Do not wait till the mixture cools completely, making balls would be impossible. If the mixture turns cold, heat it on a low flame for few minutes.
This turned out to be one of the yummiest laddoo I've ever eaten
