Instant luffa pancake



Is luffa a fruit or a vegetable, belonging to a cucumber family? It is apparently a fruit, consumed as a vegetable. It can only be eaten unripe, since it turns too fibrous to consume when ripe. The first time I ate luffa pancake (called "Heerekai dosa" in India) was when my mom made it around 16 years ago, learning from a cooking show. It was an interesting experience eating it. It gets the name dosa only due to its appearance. The texture and taste are totally different. Soft in the inside and crunchy on the outside. You can almost pull individual piece perfectly off the dosa like a pull apart bread! The chutney made of luffa is super delicious, I'll add in my upcoming post.

Ingredients
1 small ridge gourd
1/2 cup almond flour
1/2 cup chickpea flour
1/2 cup grated coconut
1 tsp cumin powder
1 tsp coriander powder
1 tbsp red chili powder
1 tsp turmeric
Salt to taste


Directions
1. Blend grated coconut, cumin powder, coriander powder, chili powder and turmeric with a little water and make a smooth thick paste. Do not make it too watery.

2. Add almond flour, chickpea flour and salt to the mix. Let it sit for 10 minutes

3. Meanwhile, wash and cut the ridge gourd into thin wheels.

4. Heat a pan, dip the ridge gourd wheels one by one into the batter and onto the pan, forming a round dosa. Flip after few minutes and back on both sides



5. Serve with tomato ketchup or ginger chutney
