My spouse and I love pesto! Pesto pasta, pesto sandwich, pesto pizza, you name it and we eat it. We have tried making it multiple times at home, never did we nail it. Finally last night was a huge success. The key was to have every one of the ingredients listed below. The Parmesan was a must have, it balances out the strong basil flavor. You can use it with any kind of pasta or spread it on your sandwiches. For best results, try to use the pesto immediately. You can also freeze it for later use.

Ingredients
1 bunch fresh basil
1/2 cup Parmesan cheese
1/2 cup pine nuts or pistachios
3 garlic pods
1/2 cup olive oil
Salt if required
Directions
1. Add all ingredients to the blender and make a smooth paste. Do not add salt at the beginning, since Parmesan contains salt. Taste the paste and add salt if required. Note that there is no water in the recipe. Olive oil binds everything together.
2. If using the paste immediately for pasta, roast the sauce very lightly for a minute in a pan and add your desired cooked pasta
3. If you plan to store it, pack it in a zip lock with all air removed and freeze.


I just love pesto, but never tried as I thought would be very cumbersome. But dint know that it could be this easy. Will surely try!
