Onion crunchies

The only thing that comes to mind on a rainy chilly day is pakoras and chai. There is nothing as comforting as having a plate of pakoras, a hot cup of tea ( coffee for me :) ) and cuddling in your couch, while the weather is gloomy, rainy and chilly! To make it a guilt free indulgence, here is the baked version, which is very close to the original dish, without loosing any crunch.

Ingredients
1 large onion
1 cup chickpea flour
2 tbsp Paprika
1 tbsp oregano
1/2 tspn baking soda
4-5 curry leaves finely chopped
1/2 tspn asafoetida
Salt to taste

Directions
1. Preheat oven to 400 degrees. Thinly slice onions and separate the strings.

2. In a bowl sieve the chickpea flour. Add paprika, oregano, baking powder, salt, asafoetida and mix well.

3. Add the sliced onion strings and mix well with very little water.

4. Spread it on an aluminum foil and into the oven for 30 minutes, flipping them at 15 minutes. Broil for 2 minutes to get the extra crunch. Serve with tomato ketchup.
