Triple A salad



I never loved salads. I always wondered how people eat raw greens and veggies. Raised in a South Indian family, everything I ate was either cooked/baked or fried. Being a vegetarian, it was quite challenging finding options at restaurants in the US, which made me embrace salads.

The first time I tasted arugula was at a restaurant and was blown away by its unique earthy flavor. I had never tasted anything like that. It's part of our daily diet now. Since arugula has a strong flavor, I like to limit the dressing to salt and pepper, making arugula the hero of the dish.


Ingredients
1/2 box washed arugula
1 avocado
1/2 apple (green or red)
Ground pepper as per taste
Salt as per taste
1/2 lime


Serves : 2 people

Directions
1. Transfer arugula to a large bowl
2. Chop avocado into large pieces. Make small slices of Apple
3. Sprinkle fresh ground pepper and salt. Add lime juice and toss with a closed lid. Adjust salt, pepper and lime as per your taste.
